Breakfast

Breakfast this morning was Tempeh Bacon and Blueberry-Corn Muffins from Vegan with a Vengeance. Mmm... Mmm... Good...

I've made both of these recipes and I think they're great. I've also made muffin recipes from that book replacing 1/2 of the flour with whole wheat pastry flour with excellent results.

Thanks Mark. We do use the w.w. pastry flour substitution sometimes as well.

And Jess, that tempeh bacon really is fabulous. Often I replace the apple cider with 2 Tbs. cider vinegar and 2 Tbs. maple syrup, but it's great either way.
