Vindaloo Vegetables

Not much to say about this one except thanks to the Fatfree Vegan Kitchen for a great recipe. It tasted pretty authentic for something that came together fairly quickly. We had it with basmati rice and it was fantastic.

I printed off that recipe to try as well, it looked unique and tasty. I haven't gotten around to making it, but your pic and post confirm that I must try it! :)

Hmmm... lots of comments for a very short post and a recipe that's not even my own. Not sure what that means exactly but keep the comments coming. ;-)

Ha! Chris, I've found that the comments are often inversely proportionate to the amount of time I put into the recipe and the write-up. I got tons of comments when I posted a non-recipe for a tostada using canned refried beans! I'm not sure what that means either, but I'll take whatever comments I get! ;-)
