We had seen somewhere before an idea for mashing cauliflower like you would mash potatoes, so we decided to try that tonight. I steamed a bunch of cauliflower until it was very soft and smashed it up with some margarine, Silk creamer and salt & pepper. It wasn't too much like mashed potatoes, but still it was really good. Next to that was a little of the Twin Oaks veggie chorizo, fried in just a little margarine and the Dijon Mustard Brussels Sprouts from La Dolce Vegan!

My husband is a mashed potatoes fanatic, but when he went on the South Beach Diet (grrr) he wasn't allowed to have them. The SBD book included a recipe for mashed cauliflower, which I really like. They're sweeter and lighter than potatoes. The general rule in the house now is that if he wants mashed potatoes, he makes them. If he wants mashed cauliflower, I'm happy to oblige.
Wish I could get those sausages here. I can find vegan sausage but not chorizo. Tried to make my own but it was a big messy disaster. That meal does look yummy! I've had mashed cauliflower several times. My mother used to fix it when I was a child. Nope it don't taste like potatoes but it does taste good!

rachel - I think talking to someone we knew who tried the south beach diet may have been where we got that idea.
jane - there's a recipe for chorizo in vegan with a vengeance that I want to try, but the locally made stuff is pretty good and not that expensive so I haven't gotten around to trying any recipes yet.
