Standard Stuff

One of the reasons we started this blog is to show that eating vegan isn't all about pasta and salads. Except occasionally it is. I came home from work a little late today wondering what to do for dinner but Darlene already had a pot of marinara sauce going and was starting a pot of water for the pasta - whole wheat spaghetti in this case. (The secret ingredient in the sauce was 1 Tbs. peanut butter, which made it very creamy.) I fixed us some salads with leaf lettuce, tomatoes, carrots, cucumbers and toasted pine nuts and a simple cider vinaigrette and put in some toast to have with the pasta and that was it. Pretty standard stuff.

I say hoorah for pasta and salad night. I'm a yoga teacher, and 3 nights a week I don't get home until 9. So, it's not too unusual for us to have pasta night. I also use the whole wheat pasta for a slight nutritional edge. I don't remember if you have a Trader Joe's near you, but recently I've been adding their "Meatless Meatballs" to the marinara sauce for a big added boost of protein & yumminess. (The same product is also available as Nate's Zesty Italian Meatless Meatballs at regular health food stores... in the frozen section).

Thanks for the tip Amey. We have TJs about a 2 hour drive from here in the DC area and we make it up there usually every couple of months and stock up. In fact it was the TJs whole wheat spaghetti that we had for dinner - the only w.w. pasta we've found so far that actually tastes pretty good. I'll keep an eye out for the meatballs next time we're there.

Nothing wrong with pasta and salads--I have them once a week. They're my favorites!
