Tacos


When I was visiting my sister in Buffalo recently we made tacos for dinner one night so I thought I'd do something similar again and share them with Chris this time. This made for a quick weeknight meal since I just sauteed some onion and garlic in oil then added TVP that had been reconstituted in boiling water; the seasoning was from a packaged mix that we picked up at the store recently. And we had them with diced fresh tomatoes, salsa, Tofutti sour cream and lettuce. Yummy-licious!

Yum! Those look good! I've never, in all my veg*n years, worked up the courage to use TVP. I don't really know how to deal with it. Is it tasty on its own or does it need flavoring like tofu? Any tips or encouragement? Is it worth trying?

Hi Amey! We use TVP quite a bit, both the chunks and the smaller crumbles. It's similar to tofu in that it's pretty bland and flavorless on it's own (probably even more so than tofu) but it sucks up every bit of seasoning like a sponge. You start by adding roughly equal parts TVP and boiling water to a bowl (and maybe a tsp. of lemon juice) then cover and let it sit for 5-10 mins. It should absorb all the water, then you can use it in soups or stews (it's popular in chili) or with anything else that might typically be made with ground beef. The key is to season it well. Here's one of our favorite things to do with the TVP chunks.

I just posted my TVP taco filling recipe on VegginOut.. hehe.. that got me wanting tacos and now that I see this, I think I have to make them tonight.

I keep seeing Tvp used for tacos. I have only put it in chili for a nice texture, but I want to try this. I picked up organic blue corn taco shells at my health food store. Your tacos look great!

thanks Jess & Karen... We've done this before but it's been a looong time. They're so good though I think we'll do it again sooner rather than later. And maybe we'll try the blue corn shells next time.

When we do TVP tacos, we actually reconstitute the TVP with canned, diced tomatoes in their juices. First we sautee the onion and garlic in olive oil then we add the canned, diced tomatoes and give them a little time to get hot. Then we throw in the TVP and all the preferred taco seasonings and let it cook off a good amount of the liquid. I feel like the TVP really takes up a lot more flavor that way. Just thought I'd share. By the way, those tacos look really yummy. I might just have to make some of my own tonight.
