Tofu Salad Sandwich and Kale

I posted about this tofu salad a few months ago. This was pretty similar - we had it on sandwiches with whole wheat toast, shredded carrots, pickles, lettuce and mustard. For the kale, I sauteed lots of garlic in olive oil with salt & pepper, then added a bunch of chopped kale, tossed it around for a bit, then added a couple tablespoons of veg. broth and covered and simmered for 5 minutes or so. Kale isn't my favorite thing in the world, but it's good for you and cooked this way it wasn't too bad. And we also had a salad that looked very much like the one from last night.

I love kale! My favorite way is sauteing it with olive oil and garlic. Try the recipe for Garlicky Kale in Vegan with a Vengeance. I like to add a little water to the pan and cook until it's softer.

Love the kale and dahl from your link... I just may have to make some.. it's been a while since I've enjoyed dahl..

Have you ever tried steaming kale leaves and rolling up fillings, like a cabbage roll casserole? It's delicious with middle eastern flavors and tahini sauce.

Hi Melody... I haven't tried the kale roll thing, but it sounds great - I'll have to keep that in mind.

I picked up my CSA vegetable share this evening and saw that there was "all-you-want" kale. Again. I like kale all right, but we've been having kale constantly for the past two months and it's getting hard to face it. Tonight, though, Susan (the farmer) had a jar of pesto she had made -- with kale! She said she just steamed about 10 big leaves of it with the stems removed, threw in a bit of basil and made pesto "the regular way." It was fantastic, so I took a big bag of kale and going to give it a try. Plus, you can freeze pesto.
