Calzones

This is something we've done here before but I was inspired to make calzones again by my blogging friend Bazu. We had some pizza sauce in the freezer from I don't remember when, and we recently picked up some Follow Your Heart vegan mozzarella at the store. I used the pizza dough recipe from Vegan with a Vengeance (but with half whole wheat flour) and we got 8 calzones out of it this time. In addition to the mozzarella, we filled them with a saute of zucchini, mushrooms, bell pepper, spinach and garlic and they were delicious as usual. On the side we had some of the pasta left over from the last post.

Yum! Calzones are one of those things that make me feel so happy and accomplished to make! (Excuse my loopy grammar). I'm just catching up to bloghopping now, and your photos are making me so hungry. Your fillings sound great.

wow!.. that's awesome! .. i think i could even convince EVERYONE ELSE that i live with to eat that! (ya, i'm the only vegan in my dorm... heck, i think there may only be ONE other vegan on the WHOLE CAMPUS!)... too bad the stores round here don't have any vegan cheese!!! :(

8 calzones is a lot. do you freeze them and save them for a quick meal later? would that work? I think I'd like to try it if it did

They definitely were tasty Jayme. And you really don't need the vegan cheese. We get it every so often, but you could just expand the veggies and/or add some crumbled tofu mixed with olive oil and Italian herbs.

Teddy, we can usually polish them off for lunch over the next couple days but in fact I may freeze a couple this time and I think they'll be fine. Either way, they're best reheated in an oven as opposed to the microwave.

Mmmmm, your calzones look so wonderful! I'm inspired.

I've been putting off making some pizza dough for a few days...not sure why, especially after my mouth began watering at the thought of these!
