Baked Potatoes

I love being inspired by what my fellow vegan food bloggers are doing. For example when I saw that Amey made baked potatoes it reminded me that I haven't made a baked potato in probably 10 years. So when I was baking bread a couple days ago I threw a few potatoes in the back of the oven too. To go with our spuds I made tempeh bacon and a yummy "cheeze" sauce from the Ultimate Uncheese Cookbook. We also had some steamed broccoli and the sauce was most excellent on that too. All in all quite a fun and tasty meal.

So here's a question: when you have a baked potato do you eat the skin? For the most part we do. I remember hearing way back when that the skin is where most of the nutrients are but more recently I read that the nutrients are a little ways under the skin so whether or not you eat it is more a matter of personal preference.

Looks yummy! I do eat the skin when I make baked potatoes, probably because I was always told that about the nutrients too when I was growing up.

Mmmm, I've always loved the skins, so tasty! We usually top ours with broccoli and homemade salsa when we have it around.

which cheese saucs is that one from the book? the only couple recipes that i've tried from that one were not my favorites so i've been gun shy but there are bound to be winners, right?

30% of the nutrients in a potato are in the skin and just under the skin--so you should eat it! I am in grad school getting my MPH in nutrition, and we just talked about this in one of my classes last week, so I thought that I had to chime in!

I always eat potato skin- every time I read the nutrition analysis for potato, they always specify "with skin." Then again, I'm a bit of a crazy obsessive- here are some other things I eat with skin:

kiwi (!)

I always eat the skin on potatoes, I think they're the best parts.
I also eat my carrots, apples and parsnips, and usually squash, with the skin on.

Well the consensus seems to be to eat your potato skins. Especially given the advice from a soon-to-be nutritionist - thanks Courtney!

I'm a little particular about eating the skins on most veggies but maybe I should try it more. I don't know about kiwi though Bazu. I've heard you can eat the skins but they seem a little too fuzzy for me ;-)

Oh, and dgmgv, we made the Melty White Cheez - actually the Swiss variation with the miso. It's been quite a while since I've had cheese but what I've found about the uncheese recipes is that they don't really taste much like cheese to me. Still, I like most of the recipes we've tried but if you go into it expecting rich cheesy flavor then it can be disappointing.

Baked potatoes are so much fun. They can be topped with everything. Yours look wonderful. Did you buy the tempeh bacon or make it?

What a coincidence! I made baked potatoes yesterday, and so did someone else who posted to my blog.

I eat the skin about half the time. Last night I didn't, because these potatoes had a sticker from the store (they were some kind of gourmet baking potato) and I couldn't rub it all off. So I skipped the skin, but watched my husband eat it without saying anything. I'm bad.

I always eat the skins... I actually really like them, so that's not a problem for me. Musty doesn't always eat the skins - but he is also unfettered by any concern over issues of nutrition (amazing!).

Also, I'm with you Chris. We get Lots of kiwis in these parts, and although I have eaten them with their skins, I really prefer them without.

I love the skin, especially if it's been baked (a lot of time I'll microwave, especially if it's summer) because the skin gets all nice and crispy.

I made twice baked potatoes recently, as our main dish actually. I forgot home much I love them. I wish I had thought ahead and bought more potatoes so I could have made some for the freezer.

BTW: Thanks for the nice words, it made me feel better. I don't know why I get so stressed out about food, I'm trying to just take it a day at a time and enjoy the process.

I don't know if I've ever made twice baked taters Lady Di but that sounds good - maybe I'll give it a try some time.

veg-a-nut - I don't think I've bought tempeh bacon since I tried the recipe in Vegan with a Vengeance. That or some variation thereof is what we do these days. It's so much cheaper that way ;-)

I eat the skins 'cause I rub them with coconut oil before baking and they're all brown and crispy... the best part of the potato without a doubt!

We are SOO much fans of baked 'taters around here... cheap, filling and versatile.

I haven't had luck finding a really good cheese "sauce" either, I'm glad you had one that worked for you! It all looks yummy!!
