Baja Tempeh Burritos

First off, thank you all so much for the wonderful comments and well wishes. We're looking forward to the ride.

For now it's back to digging into Veganomicon. Darlene's away for a few days visiting her sister in North Carolina and that means I can kick up the heat level in my dinner more than I usually do. Now it also means that I can cook with alcohol. Doubtful that cooking with a little wine or beer would do anything to the baby but we're playing it safe and steering clear. For her anyway. So when she left I went straight to the Baja-Style Grilled Tempeh Tacos recipe and the chile-beer tempeh marinade. Only we didn't have corn tortillas so I used whole wheat flour tortillas. Which I guess makes these burritos rather than tacos but either way they're awesome. You might notice that I especially had fun playing with the Lime Crema after I put it in a squeeze bottle. I couldn't decide which picture I liked best so I loaded 'em both.


And this is completely unrelated to dinner - it's more for Darlene. Here are the kitties looking out the window waiting for mom to come home.

Wow, I missed your big announcement... what with all my busy times. Congratulations!! I'm so excited for both of you. I can see from all these months (years??) of reading your blog how sincere and dedicated you and Darlene both are. Seeing the love and devotion that you showered on sweet Violet... seeing the care and nutrition that you put into your meals... seeing the discipline and commitment that you put into this blog!- I can see that your little bean is going to be a very, very lucky & loved little one. Whatever form your blog takes, I'll still be here to read it... even if you only post once in a blue moon.

wow, the Baja-Style Grilled Tempeh Tacos look phenomenal - and how fun that you got to "kick up" the spice/heat in your meals while Darlene is away - sounds like my kind of meal for sure, since I LOOOVE spice!!

Thank you sooo much for all the kind words Amey. I did briefly consider making the 500th post the last one, but all the wonderful comments make me happy to continue.

And the cat pictures seem to go over well so there are plenty more where that came from ;-)

I'm glad you haven't ended your blog, Chris (& Darlene)! Even if it's not frequent, even if it's not 100% about food, I know that a lot of us will appreciate getting some updates from you guys about your lives. I know I always learn something here.

Like today, I learned that I really should get a squeeze bottle- it is just too fun to play with sauces!

And those kitties are beyond adorable.

The post-pun kitchen ladies are total magic. Every recipe I've made by them has been phenomenal. This is definitely the next one on my list!

Oh, I am so happy for you! My husband and I look forward to your comments about raising baby vegan, because we plan on doing the same and would like some ideas/help in that area! Love, love your blog and your cats - mine do the same thing!

I don't have the book, I am trying to get it from the library...I like to try a few recipes first to make sure it would be worth the purchase. Anyway...this one caught my attention and I wrote it down. Do you ever post recipes?
